9 ounces white chocolate 1 1/4 cup heavy cream 1/4 teaspoon vanilla 1/4 teaspoon peppermint extract 6 small candy canes or peppermint sticks for garnish 6 fresh mint leaves for garnish
Set up a double broiler by setting a bowl on a saucepan of barely simmering water. The water shouldn't be touching the bowl. Add the white chocolate and 1/4 cup of cream to double broiler. stir until the chocolate is melted and completely smooth. Take the bowl off the heat, and let it cool while you whip the cream.
Add 1 cup of cream, 1/4 teaspoon vanilla, and 1/4 teaspoon of peppermint extract to a large mixing bowl. Mix on high for about 2-3 minutes until it forms medium peaks.
Add half the white chocolate cream, and fold it in, then add the rest. Fold until just combined.
Spoon into small glasses, and let it set in the refrigerator for about an hour. Garnish with mint and peppermint candy.
