Here's my pasta arrabiata with chicken ("arrabiata" is a fancy word for spicy red sauce)! It's delicious, wholesome, and so easy to put together.
What makes this dish so tasty is the complexity of flavors. The arrabiata sauce has heat from the peppers, tanginess from the tomatoes, and an overall warmth from the roasted vegetables.
I added Tyson® Lightly Breaded Chicken Breast Strips, that I bought at Walmart, to the dish. What's nice about the chicken is that it has 65% less breading compared to original crispy chicken strips. This means more meat with the same breaded taste. For my daughter, who will eat mostly breading, this is a good thing!
I also like that the strips are made with 100% white meat chicken, have no preservatives, and use all natural ingredients. Plus, they're fully cooked so they're easy to prepare.
Chicken Pasta ArrabiataServings: 4
Time: 60 minutes
- 2 pounds Roma tomatoes (about 8)
- 1 red pepper
- 1 yellow pepper
- 1 medium onion
- 3-4 garlic cloves
- 2 spicy peppers (we used Fresno peppers)
- 2 tablespoons diced basil
- 1 teaspoon diced oregano
- 1 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 box penne pasta
- 1 bagTyson® Lightly Breaded Chicken Breast Strips
- Shredded parmesan cheese to garnish
Cut the tops off the tomatoes. Cut the onion in half. Cut the peppers in half and removed the seeds. Toss in the olive oil, and bake at 450F for 40-45 minutes, until the skins start to blacken.
Transfer to a pot, add the salt and herbs, and use an immersion blender to blend into a sauce.
Stir over low heat for another 10-15 minutes to reduce, and add additional salt to taste.
While the sauce is simmering, cook pasta following the directions on the packaging, and cook 6-8 pieces of Tyson® Lightly Breaded Chicken Breast Strips following the directions on the bag.
Toss pasta with olive oil, cut chicken strips on a bias (diagonally). Put pasta in a bowl and pour sauce over it.
Top with chicken strips and add chopped basil and shredded parmesan cheese to garnish. Enjoy! It's delicious.
I love the way the fresh ingredients looked in my shopping cart at Walmart!
