I’ve noticed that recently, when we’ve gone out for Italian food, I’ve been ordering dishes with spicy red sauces. So I wanted to make one at home, and use it in a recipe my family would love.
Here’s my pasta arrabiata with chicken recipe (“arrabiata” is a fancy word for spicy red sauce)! It’s delicious, wholesome, and so easy to put together.
What makes this dish so tasty is the complexity of flavors. The arrabiata sauce has heat from the peppers, tanginess from the tomatoes, and an overall warmth from the roasted vegetables.
I actually used cooked breaded chicken breast strips, but feel free to add any chicken breasts you like.
Chicken Pasta Arrabiata
Directions:
Cut the tops off the tomatoes. Cut the onion in half. Cut the peppers in half and removed the seeds. Toss in the olive oil, and bake at 450F for 40-45 minutes, until the skins start to blacken.
Transfer to a pot, add the salt and herbs, and use an immersion blender to blend into a sauce.
Stir over low heat for another 10-15 minutes to reduce, and add additional salt to taste.
While the sauce is simmering, cook pasta following the directions on the packaging, and cook 6-8 pieces of Tyson® Lightly Breaded Chicken Breast Strips following the directions on the bag.
Toss pasta with olive oil, cut chicken strips on a bias (diagonally). Put pasta in a bowl and pour sauce over it.
Top with chicken strips and add chopped basil and shredded parmesan cheese to garnish. Enjoy! It’s delicious.
