There is nothing better than a “girls night in,” hanging out with girlfriends (preferably in pajamas), binge watching a show, eating something decadent, like greasy fried chicken, and drinking something delicious.
Now that I’m a mom, I can’t handle a fancy cocktail the way I used to, so I decided to come up with a refreshing açaí grapefruit raspberry mocktail that can, of course, be easily turned into a cocktail, but tastes great on its own. This drink would also be perfect to serve to guests on a hot summer day, it’s that refreshing.
I’m always looking for balance in my recipes. So to compliment the sweetness of the juice, I added sparkling water to give it fizz. To add a little acid punch, I squeezed some fresh grapefruit into the glass. And to give it a clean finish, I garnished it with mint.
