My daughter, Lainey, is a snacker, especially when she gets home from school. Honestly, I don't think she ever touches her lunch. That's why I try have healthy homemade snacks on hand and I use this Chewy Peanut Butter Granola Bar Recipe to make her tasty treats with nutrition baked in.
What I love about these granola bars is how easy they are to make, and how chewy, nutty, and chocolate-y they are without being too sweet. Plus, they are filled with lots of good stuff: plain peanut butter, walnuts, flax seeds (yes, I sneak these in), oats, a little bit of honey, and dark chocolate. The only problem is that my husband and I like them even more than my daughter does, and we can polish them off before she gets home from school!

What she was doing looked so effortless and old-school. And it looked so delicious when she was done. I knew someday I'd have to try it, to see if it actually was that effortless and delicious.
