I love to bake these cinnamon applesauce muffins as a healthy snack for our family. These are simple to put together, and by using applesauce, I'm able to cut down on the sugar. Plus I add walnuts to give them crunch, and to add some extra good stuff.
CINNAMON APPLESAUCE MUFFINSIngredients:
- 3 cups white flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 2 1/2 teaspoons baking powder
- 1 teaspoon of kosher salt
- 2 1/2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1 cup chopped walnuts
- 2 eggs
- 1/2 cup vegetable oil
- 1 1/2 cups applesauce
Preheat the oven to 350F.
In a large mixing bowl, add the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir until evenly distributed.
Add the eggs, oil, and applesauce to a second mixing bowl, and beat by hand until thoroughly combined. Pour the mixed ingredients into the dry, and stir by hand with wood spoon or spatula until just combined. Fold in the walnuts. The dough will be thick, but don't worry, that's normal.
Coat a muffin tin with nonstick spray or thoroughly coat with butter. For 12 muffins, fill each about 3/4 full. For larger muffins, you can fill to the rim and get about 9 muffins.
Bake for about 25 minutes, until the dome of the muffin is nicely browned, and a toothpick comes out cleanly.
