Haitian Independence Day is celebrated on New Year's day. A big pot of pumpkin soup(soup joumou) is prepared as a way to celebrate freedom. Only French were allowed to eat this soup that were prepared by the slaves. But Haitians started to eat this soup as a way to celebrate freedom and to express that they were no longer under control by the French after gaining their independence on January 1st, 1804. Traditional, holiday, patriotic soup.
