Crockpot Creamy Broccoli Cheese Soup

Yummy yummy yummy! That's all I can say about this crockpot creamy broccoli cheese soup. Well that, and that it's super easy to make. It comes out cheesy and rich, warming, and delicious.

Ingredients

  • 1 bag fresh broccoli florets
  • 1 cup shredded carrots
  • 2 cloves minced garlic
  • 1 sweet onion chopped
  • 2 cups vegetable broth
  • ½ cup Half and Half
  • 1 can evaporated milk Whole Milk
  • 1 ½ teaspoons coarse salt
  • ½ teaspoon pepper
  • 3 ounces cream cheese
  • 1 cup shredded cheese

Instructions

  • Place the broccoli, carrots, garlic, onion, broth, cream cheese, half and half, salt and pepper in your crockpot. Cook on high for 2 ½ hours.
  • Scoop out 2/3 of the soup and puree in a blender. You can puree all the soup if you want it to have a smoother consistency. Be careful as it will be hot!
  • Pour the pureed soup back into the crockpot. Add the evaporated milk and shredded cheese. Mix to combine.
  • Cook for an additional 20-30 minutes on low. Serve the creamy soup with steamed broccoli, crispy bacon and sprinkled cheese on top!

Notes

Try topping your bowl with crumbled bacon, shredded cheese, and a dollop of sour cream.
