Paleo Coconut Macaroons
They are soft, coconutty, and crisp on top. Plus the walnut meal gives them a slight earthiness. The best part is they have no grains — just egg whites, unsweetened coconut flakes, walnut meal, vanilla, and the tiniest bit of sweetener. And you can put them together in about 10 minutes.

- one 14oz bag of unsweetened coconut
- 3 egg whites
- ½ cup of almond or walnut meal
- 1 teaspoon vanilla
- 3 tablespoons granulated sugar
- ½ teaspoon kosher salt
Preheat your oven to 325F
In one bowl, mix the coconut, nut meal, and salt.
In a second bowl add egg whites and beat until the eggs start to froth. Add the sugar and vanilla and continue to beat until you get a firm peak when you pull the mixer out of the egg whites.
Fold the coconut mix into the egg whites until it is just mixed.
Take a tablespoon and scoop them out onto your baking sheet. You can place them close together because they don’t spread.
Bake for 13-15 minutes until they start to brown.
