Apple Crumble Cake Recipe

The crumble cake is filled with lots of apples, plus there's a touch of apple cider vinegar in the cake batter to give it a little brightness. The crumble topping is beyond yummy with lots of cinnamon and sugar. This is the perfect cake for fall because the apples and cinnamon will really warm you up.

Ingredients

  • For the cake
  • 2 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup 1/2 stick melted butter
  • 2 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla
  • ½ cup milk
  • 2 tablespoons apple cider vinegar
  • 2 medium apples peeled and cored
  • For the topping
  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup 1 stick melted butter
  • 1 cup all-purpose flour

Instructions

  • Preheat the oven to 350F and grease a 9" springform pan with butter.
  • Whisk the dry ingredients (2 cups flour, 2 1/2 teaspoons baking powder, 1 teaspoon salt, and 1/2 teaspoon cinnamon) in a bowl and set aside.
  • In a large mixing bowl, add 1/4 cup melted butter, 2 eggs, 1 teaspoon vanilla, 3/4 cup granulated sugar, 1/2 cup milk, and 2 tablespoons of apple cider vinegar. Mix on high for about one minute. Stir in the dry ingredients until just combined.
  • Add half the batter to the greased pan. Stir the chopped apples into the remaining batter. Add the rest of the batter to the pan and smooth the top.
  • Make the topping by adding 1/2 cup of brown sugar, 1/4 cup granulated sugar, 1 teaspoon cinnamon, 1/2 teaspoon salt, 1 cup of flour, and 1/2 of melted butter. Mix until it starts to clump, then spread across the batter.
  • Bake for 40-50 minutes. Check the center with a toothpick to make sure it is fully cooked.
